How to make Iced Tea
Use 4 Irish Breakfast tea bags and a family size tea pot. Put one tablespoon of castor sugar and 4 mint leaves in the pot and fill with boiling water. Allow to infuse for 20 minutes. Remove the tea bags and allow to cool. Remove the mint leaves.Pour into a jug of ice cubes and add 1/2pt of orange juice, juice of 1/2 lime, 1/2 orange sliced and the other half of the lime sliced and 4 sprigs of mint. Stir and serve over yet more ice in tall glasses. Variations: leave out the orange juice for a clear tea. Use more sugar if you have a sweet tooth! If you want to use loose tea I would suggest one of the strong breakfast varieties like an Assam, the Irish Breakfast or the Labookellie BOP and use 4 heaped teaspoons. Remember to strain it to get rid of the tea leaves and the mint leaves.
